Hawaiian Chicken Salad

2 cups chicken, cubed or shredded
3/4 cup shredded cheddar cheese
1 small can crushed pineapple, drained
1/2 cup chopped pecans or almonds
1.2 cup flake coconut
1/2 cup grapes, halved
1/2 cup mayo
salt and pepper

Mix all ingredients and chill in fridge for at least an hour before serving. Great on croissants, or rolls, or over a bed of fresh spinach.
